David - what kind of bit are you using in that Dremel?

I am using a 3/32" downcut carbide. I figured what my OD was and kept shortening the ID of the cut little by little until I reached the desired width of the groove.

I just ordered the same router base and circle cutter jig. Do you
think using the 3/32 bit is a good one to start with? This will be
my first rosette. i'm just doing a 3mm abalone ring. I also
plan on practicing with mdf.

Any advice?

I will definitely get the down cut spiral bit. I think Rockler and Woodcraft have them.
