Jonathan Kinkead's book has simple to make mortise and tenon jigs. I also saw a system where the neck block mortise was cut on a table saw with a dado blade, you can rabbet a whole strip of blocks in one pass. Then you cross cut the blocks short of final height then glue on a cap to reach the final dimension --- pretty slick!
