I would like to get better by attending a "hands on" school on finish spraying. Does anyone know of one? The only one I can find is this one:

I'm with you, Tim. If I could spend a couple of days getting it down, under a pro so that I could repeat it when I got home, it would be worthwhile.

I would suggest contacting Reranch guitar finishing -- they may have a course or pehaps point you in the right direction.
