Can anyone offer an opinion as to the pros/cons of not doing the trimming the top for trussrod step till after the bindings have been routed out? I am not sure if it matters but being my first build would like to avoid pitfalls where possible.

There's no reason for not removing the sound-board truss rod clearance prior to binding channels -- but do not remove the mortise cap formed by the sides, for the reasons noted here:
