Acoustic Guitar Construction

I've watched a number of vids of this instrument being played by different musicians - they all seem to wear those hats - I think the instrument is called a 'Kyrgyz Komuz, a 3 string fretless job.
There are a number of whippersnappers over there in Turkey or wherever that can really shred on these things - but this guy is tasteful and musical. The guys that follow, not so much.
