The veneer on the back of the headstock is macassar ebony and it gave me fits!!
I use MInWax Wipe on Poly for my necks. It has a nice feel and it is easy to apply and get a nice, glassy finish. It does not, however, like oily woods and will not dry when applied over them. So I was happily applying coat after coat of the stuff to the neck and I noticed that every other grain line on the back of the head stock was not drying. It was sticky and dull in appearance. I learned that certain woods need to be sealed with shellac before the Wipe on Poly will dry over them. I sanded off the finish and started again after sealing.
Turned out fine in the end.

Kevin, I love walnut. I have a set of Turkish walnut and a set of black walnut waiting to become guitars one day. The black walnut will be a guitar by next year as it is a commission.
