27 1/2" used an LMII template. 0000 Martin that I had a outside mold for since I had previously built a 0000 kit that I got from John Hall. Used the bracing pattern and dimensions from that except for neck and body is a little deeper.

Still brainstorming about this project and here is where I stand about it now.
Engelman spruce top
Maple back and sides. nothing figured, unfortunately going low budget
Laminated maple neck with wenge/padouk/wenge core
Wenge fretboard, bridge and headstock (my wenge slab is not quarter sawn, any issue using this for fretboard and bridge?)
Multiscale 28/26.5
Jumbo inspired body shape
I'm considering a Manzer wedge, any thoughts on this?

What are the risks if I use a piece of wenge that is not quarter sawn for a fingerboard?

Should be fine. Slice it in two horizontally and you should get two fretboards out of that piece.
