Mathematically it seems like it would – you have to take care not to get the front edge of the bridge too short or the saddle slot too shallow. You’re not talking about a lot of material. So normally saddle height is the compensating factor. But failure to contour (sand) the bottom of the bridge so it conforms to the sound-board in my view is a big mistake, so shaving a tiny bit more is no big deal.
