So, I am assuming the binding piece is a solid ring routed out from a blank as if it was a rosette ring and not a long straight piece that is bent.

When I've used the 'can' method, I first bent the wood using a curling iron.

I think you could use a funnel as a wedge -- tape in place, then slide in the funnel to apply pressure. The balloon idea does not appeal to me because it is likely to expand over the edge and you will not be able to see if you have contact all the way around the hole.
Time to visit the finishing section --- lots to learn (sealing etc.) there.

WHILE I HAVE NEVER DONE THIS OR SEEN ANYONE DO THIS, perhaps a 'trial run' using a hole in a suitable hunk of wood (lauan mahogany plywood door skin?) and a hunk of the binding that's intended to be used, and make a trial run or two until the techniques and results look right? I think there's no reason to go for broke on your nice soundboard when there's less risky/costly alternatives available that would allow skill development. Maybe this is one of those times when learning on the one good part you have doesn't need to be done.
