What Robert said. I actually use a 400 grit diamond stone then an 8000 grit water stone.

I use a honing guide for setting the angle and the initial sharpening. After that, I use 1500, and 2000 grit paper to touch up the edge several times before another session with the guide. I have a marble slab that is nice and flat that I put the paper on. Works well for me and touch ups take less than a minute. Initial sharpening and angle setting takes a little time but it is worth doing it right.
