yes, I got fish glue from a furniture restoration shop, that could be used cold out of the bottle.
And I stopped using HHG, because the working time is too short for me and it hardens yellow.
So after using 5 different glues, I am back with Titebond. Ha!

What do you think about titebond lll ultimate for this purpose?

Sorry, no experience with that.
I used titebond II for gluing purfling to binding, and that holds up good while bending, But for #3 you need advise from others.

I sometimes have used titebond III on bindings. But there have always been a chorus of builder who say not to use it for braces or bridges because it creeps to much. No experience of my own, but never a thought to test it.

I've tried to order some fresh fish glue, but though the price is not bad, once again shipping is 3x as expensive as the glue itself. If Amazon Prime had it I would get it there and have free shipping.
