Would 320 grit be ok for a final finish when using wipe on varnish/oil ?. And when do you say enough is enough sanding and not get into trouble later on

Probably different ways here, but I go to 220.

This is easy --- follow the instructions that are provided by the manufacturer, who would know better?

as an example

If you're using tru oil you can go as high as you like and it will adhere.
