Classsifying Soundboards

So if you were to classifying soundboards beginning with the "Brightest" what would be at the top of the list and so on? Would it be Red Spruce? and then Sitka or something else? there are so many choices it gets pretty confusing..Lutz? What's LUTZ? Then there's German and yet there isn't any such thing any more?...Italian. European, but why isn't German and Italian and European the same? Wood really IS confusing for a "New-bee"...they are all spruce so what's the difference? and that's only SPRUCE soundboards...other species and sides and backs are a whole other world! Can we shed some light on this stuff?! Thanks...
